This is the sugar free, low carbohydrate, keto and gluten free version of this popular holiday cookie idea.

I like how easy these cookies are to make as well!

That cookie is based upon the classic, or sugar and molasses, version of the gingerbread cookie.
This gingerbread cookie recipe however, has been adjusted to accommodate other diets such as keto and low carb.

I am always looking for the perfect way to store my food. Luckily, I found these genius ideas for food storage which may also be helpful for you!

This recipe is for anyone asking can diabetics eat gingerbread.

I must first refer you to your health specialist for what is best for you as that is not the purpose of this recipe. However, what I must say is that this recipe has no added sugar in it.

The classic gingerbread cookie recipe is typically made with molasses.

Molasses really gives gingerbread that dark color, sweet taste, and unique flavor.
While, molasses is not a listed ingredient in this recipe, you could easily add a small amount (teaspoon?) if you are looking to get some of that color and flavor.

Readers have asked me how do you make gingerbread cookies from scratch.

The truth is that making gingerbread cookies from scratch is not the hardest kind of cookie to make. I could easily say that the secret is to remember to add the spices that give the gingerbread its famous taste.

Molasses does give the gingerbread cookies that flavor and color that adds so much to the cookie.

Adding a teaspoon or two of molasses is one way to give your cookies that flavor and color without contributing a lot to the carbs and sugar. However, (YAY!) there are molasses alternatives available that you can try, please remember to read the label on the packaging.

Here are some tips for making gingerbread cookies.

I mentioned above that adding teaspoon or two is an optional way to get a more true gingerbread flavor and color. Also, I mentioned that you could try using a molasses alternative that can be used in baking.

Here are some more helpful tips.

  1. Refrigerating the cookie dough is a great way to get it hard enough to cut with a cookie cutter. I like to roll out my dough, cover it with plastic wrap, and then refrigerate it for at least 45 minutes before using a cookie cutter.
  2. If your cookie dough seems to be too dry to work with, simply stir in a teaspoon at a time of milk until you reach a good consistency.

Gingerbread cookies can be stored in an air tight container for up to a week.
However, if you have used an icing or other kind of topping with your cookies, you should consider how to store that to keep your cookies okay. The dough however, can be refrigerated for up to a week or even frozen!

Ingredients needed to make sugar free low carb keto friendly Gingerbread Cookies.

How to Make Low Carb Gingerbread Cookies

  • In a medium bowl, use a whisk or a fork to mix together the flour, baking powder, xanthan gum, cinnamon, ginger, nutmeg and cloves.
  • Next, in a large mixing bowl, blend together the butter and the sugar alternative. Once this in blended you can stir in the egg and the vanilla extract.
  • Add the dry ingredients from the first bowl to the ingredients in the mixing bowl. Stir until just blended. Cover the dough with plastic wrap and refrigerate for at least 45 minutes (three to four hours or overnight works best).
  • When you are ready to bake the cookies remove the dough from the refrigerator. Preheat the oven to 325 and prep at least two rimmed cookie sheets for nonstick. I use parchment paper. You can roll out you dough (¼-1/3 " thick), cut out the cookie shapes, and bake them on the same parchment lined cookie sheets.
  • Bake your cookies for 10-12 minutes or until they begin to 'puff'. Allow the cookies to sit on the baking sheet for a few minutes before transferring them to a cooling rack for cooling
