I love taking shortcuts in the kitchen and am a firm believer that you don’t need to make something from scratch for it to be delicious.

You’ll need the following ingredients to make these easy ube pancakes. You can find these at your local Filipino or other Asian grocery store.

  • pancake mix (buttermilk or other neutral flavor)
    • plus additional ingredients according to package instructions
  • ube extract
  • ube halaya (aka ube jam or mashed ube)

Start by preparing the batter according to the instructions on the package of your favorite pancake mix.

Then, incorporate the irresistible flavor of ube by adding ube extract and ube halaya (mashed ube or ube jam) to the wet ingredients. Mix well to ensure the rich purple color and mashed ube are evenly distributed.

Mix the dry ingredients and wet ingredients separately before combining. This helps to avoid over-mixing the batter.

Stir just until the wet and dry ingredients are combined, some clumps in the batter are ok. For light and fluffy pancakes, be careful not to over mix.

Instructions

  • Make the batter according to the package instructions of your favorite pancake mix.

  • In a bowl, mix together the wet ingredients. In a separate bowl, mix together the dry ingredients.
