If you’ve ever wondered what someone who has been plant-based for seven years has for dinner – this is it! I always try to diversify my plate with a plant-based protein source, a carb and a vegetable, paired with a delicious sauce.

You can use this exact formula to make a million amazing and balanced plant-based meals. In this case, I utilized chickpeas (protein), potatoes (carb), and cauliflower (veg) to make an incredible filling recipe that will be on repeat in your household.

This sheet pan meal is all about the key elements. Chickpeas, cauliflower and potatoes have great nutritional properties. What’s more, they act as fantastic vessels for carrying flavors. Perfect for spices and the tahini dressing that comes with it!

Cauliflower

  • Nutrient-Rich. Cauliflower is packed with essential nutrients, including vitamin C, vitamin K, and folate, making it a healthy addition to your meals.
  • High in Fiber. Cauliflower is a good source of dietary fiber, which can aid digestion and help you feel full for longer.

Potatoes

How to Make This Recipe

The first step with recipes like these is to preheat the oven to 400F.

Add the chickpeas, potatoes, and cauliflower into a cast iron or ceramic roasting pan. Add the spices, cornstarch, olive oil (if using) and lemon juice.

Toss everything together until the veggies are evenly coated in the spice mixture. Place teh pan in the oven and roast the veggies for 45 minutes, until the potatoes are soft and the cauliflower is crispy.

While the vegetables are in the oven, make the tahini herb dressing.Whisk parsley, tahini, garlic, lemon, maple syrup, and paprika in a bowl or jar with a little bit of water to thin.

To serve, pour some tahini sauce onto a plate and top it with roasted cauliflower chicpea potato mix. Enjoy immediately.

Hack It!

  • To ensure even cooking, I would suggest using a shallow pan so that you can spread the contents in one layer. I also recommend tossing the ingredients about halfway through the cooking process.
  • You can customize this sheet pan recipe with your favorite protein source, and pretty much any winter vegetable.
  • Same goes for the spices! For instance, you can make roasted veggies with curry spices, Italian seasoning, and more. It all depends on your preference and what you have available to you.
  • Make a big batch of tahini herb dressing and use it for other meals you have throughjout the week. For instance, it works amazing as a salad dressing or an ingredient in a veggie wrap.

Kitchenware and Equipment

Aside from a knife and cutting board, you just need a good roasting pan to cook chickpeas, potato and cauliflower. I recommend cast iron, ceramic, or glass.

For the dressing, you can use any small bowl or jar and whisk it with a fork or mini whisk. So EASY!

Ingredients

  • 1 15oz chickpeas, canned, drained and rinsed
  • 1 head cauliflower, broken into florets
  • 3 cups mini potatoes, quartered
  • 1 tbsp extra virgin olive oil, optional
  • 1 lemon, juiced
  • 1 tbsp cornstarch
  • 2 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt

Tahini Herb Dressing

  • ½ cup tahini
  • 2 cloves garlic, minced
  • 1 handful parsley, minced
  • 1 lemon, squeezed
  • 1 tsp maple syrup
  • ½ tsp paprika
  • 3 tbsp water, or more, to thin

Equipment

  • Large sheet pan or roasting pan

Instructions

  • Preheat the oven to 400F and line a baking sheet with parchment.

  • Add the chickpeas, potatoes and cauliflower to the pan. Toss with the cornstarch, olive oil, lemon juice and spices until covered. Roast for 45 minutes, until the potatoes are cooked and the cauliflower is crispy, tossing halfway through.

  • While the vegetables bake, make your dressing.Combine the parsley, tahini, garlic, lemon and maple syrup in a bowl, along with water 1 tablespoon at a time thin.

  • Pour the dressing onto a plate, followed by the roasted vegetables. Enjoy immediately, or store separately in the fridge for up to 4 days.
