Funfetti Cheesecake Bars Recipe
What's a celebration without SPRINKLES? Whether you're 4 or 84, it's a fact that sprinkles make everything better. No matter what. So if you have a birthday party or another type of celebration coming up, sprinkles are the way to go!
BUT... if you're short on time, or energy (been there), it's not always feasible to make and frost a layer cake! If you've ever wanted to throw together a super quick dessert that's just as impressive and festive as any more complicated cake, today's recipe for easy sugar cookie confetti cheesecake bar recipe is your answer! And they're only FIVE INGREDIENTS!
These confetti cheesecake bars have everything -- the delicious vanilla flavor of sugar cookies, a rich, creamy cheesecake filling, and fun rainbow sprinkles!
Confetti Cheesecake Bar Ingredients
This recipe reminds me of my Pineapple Pecan Cheesecake Bars, but way simpler! Did I mention the come together with only five ingredients? All you need is:
- Store-bought cookie dough - if you can't find confetti cookie dough, just fold in some additional sprinkles into regular sugar cookie dough!
- Cream cheese - use softened cream cheese that is at room temp so that you can easily mix your cream cheese mixture.
- Granulated sugar - adds the perfect sweetness to these cheesecake bars!
- One large egg - your egg should be room temperature before mixing it in.
- Vanilla extract - I always use a high-qualitypure vanilla extract. Or better yet, check out my post onhow to make vanilla extractat home with just 2 ingredients!
That's it! The secret is the cookie dough you buy. I made these with Pillsbury Confetti Cookie Dough, which has Funfetti sprinkles built in and is so easy to work with (not sponsored -- I just ran into this dough at Target and thought I would try it), but if you can't find that dough, just add some colorful sprinkles to your favorite sugar cookie dough!
And there you have it -- the basic ingredients for one of my favorite desserts! So once you have your ingredients, grab a 9x9 square pan and get started making your confetti bar cheesecake!
Best of all, this delicious dessert is so much simpler than a typical cheesecake -- no hot water bath, graham cracker crust, or springform pan needed!
Step by Step
The recipe card at the bottom of the post has the full instructions and ingredient measurements, but here are the steps for this simple recipe:
- Cookie dough base layer - Line a 9x9 baking dish with parchment paper. The cookie dough is separated into 12 cookie portions, so take 8 of those portions and press them into the bottom of the pan.
- Funfetti cheesecake filling - Now, to make your cheesecake batter just beat your room temperature cream cheese in a stand mixer or hand mixer until fluffy. Beat in sugar, egg, and vanilla until creamy, and then spread evenly over the cookie base.
- Cookie crumble topping - Then just break the last 4 cookie sections in small pieces and scatter on top of the cheesecake mixture. If you have some on hand, now is the time to toss on some extra sprinkles! And you're ready to bake this confetti cheesecake bar recipe!

- 16-18 oz (454 g) Confetti Cookie Dough - Or regular cookie dough (just add your own sprinkles)
- 8 oz (227 g) cream cheese - room temperature
- ½ cup (100 g) granulated sugar
- 1 large egg - room temperature
- ½ teaspoon (2 ml) pure vanilla extract
- extra sprinkles - (optional)

Instructions
Preheat oven to 350°F. Grease a 9x9 square baking pan and line with parchment paper.

Press 8 cookie dough sections (or about ⅔rds of the dough) evenly into the bottom of the pan.
16-18 oz Confetti Cookie Dough
In the bowl of a stand mixer or with a hand mixer, beat softened cream cheese until fluffy.
8 oz cream cheese
Beat in sugar, egg, and vanilla until creamy. Spread evenly over the cookie base.
½ cup granulated sugar, 1 large egg, ½ teaspoon pure vanilla extract
Break remaining cookie portions into small pieces and scatter over cheesecake layer. Top with additional sprinkles, if desired.
16-18 oz Confetti Cookie Dough, extra sprinkles
Bake at 350°F for 35 minutes, or until cheesecake is set and cookie topping is slightly golden. Cool completely before slicing into bars.
